Overripen, cryomacerated and aged in four tonneaux, one of which was new, and for over an year and a half on its own yeasts.

Deep straw yellow color. Lemon balm, lily of the valley, balsamic hints surprise the nose. On the palate it continues implemented in power, bringing mandarin and licorice notes to the taste. Balance and complexity identify this specific Sauvignon which will surely have a long life in bottle, as long as they remain closed.
The fish in all its forms can fit without fear. However, it aims to join the suckling pig cooked under the ground and a side dish of peperonata.
